Recipe

Ingredients:

  • 2 ribeye steaks (about 1.5 inches thick)
  • Salt and freshly ground black pepper
  • 2 tablespoons vegetable oil
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, crushed
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Directions:

  1. Prepare the Steaks: Remove the ribeye steaks from the refrigerator and let them sit at room temperature for 30 minutes. This ensures even cooking.
  2. Season: Generously season both sides of the steaks with salt and freshly ground black pepper.
  3. Heat the Pan: Place a heavy skillet (preferably cast iron) over medium-high heat and add the vegetable oil. Heat until the oil is shimmering and just beginning to smoke.
  4. Sear the Steaks: Carefully lay the steaks into the hot pan. Sear without moving them for 3–4 minutes on the first side, creating a rich brown crust.
  5. Flip and Add Aromatics: Flip the steaks and add the butter, crushed garlic, thyme, and rosemary to the pan.
  6. Baste: Tilt the pan slightly and use a spoon to baste the steaks continuously with the melted butter and herbs for another 3–4 minutes, or until they reach your desired level of doneness.
  7. Check Temperature: Use an instant-read thermometer to check the internal temperature: 125°F (52°C) for rare, 135°F (57°C) for medium-rare, 145°F (63°C) for medium.
  8. Rest: Remove the steaks from the pan and let them rest on a cutting board for 5–10 minutes to allow the juices to redistribute.
  9. Serve: Slice against the grain and serve with your choice of sides.
