Ingredients:
1 pound ground beef
1 onion, diced
4 cups potatoes, thinly sliced (about 4 medium potatoes)
2 cups shredded cheddar cheese (divided)
1 can (10.5 oz) cream of mushroom soup (or homemade)
1 cup milk
Salt and pepper to taste
1 teaspoon garlic powder (optional)
1 teaspoon paprika (optional)
Fresh parsley, chopped (for garnish)
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Cook the Ground Beef:
In a large skillet over medium heat, brown the ground beef and diced onion until the meat is fully cooked and the onion is translucent. Drain any excess fat. Season with salt, pepper, garlic powder, and paprika (if using).
Layer the Casserole:
In a greased 9×13-inch baking dish, layer half of the sliced potatoes at the bottom. Sprinkle half of the cooked ground beef mixture on top. Add half of the shredded cheddar cheese. Repeat the layers with the remaining potatoes, ground beef, and cheese.
Prepare the Sauce:
In a separate bowl, whisk together the cream of mushroom soup and milk until smooth. Pour the mixture evenly over the layered casserole.
Bake:
Cover the casserole with aluminum foil and bake in the preheated oven for 45 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is bubbly and golden brown.
Serve:
Let the casserole cool for a few minutes before serving. Garnish with fresh parsley if desired.
