Ingredients:
- 4 slices bread, torn into 2-inch pieces
- ½ cup milk
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 2 pounds ground beef (regular or lean)
- 1 cup freshly shredded Parmesan cheese
- 2 large eggs
- ¼ cup fresh parsley, chopped
- 3 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
For the glaze:
- ¾ cup ketchup (or Australian tomato sauce)
- 2 tablespoons tomato paste
- 2 tablespoons packed light brown sugar
- 4 tablespoons cider vinegar (or white vinegar)
- 1 teaspoon Worcestershire sauce
- 1 teaspoon garlic powder
- ½ teaspoon cracked black pepper
- 1 teaspoon onion powder
Directions:
- Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper or lightly grease it.
- Place the torn bread pieces in a large mixing bowl and pour the milk over them. Let them soak while you prepare the other ingredients.
- Heat olive oil in a skillet over medium heat. Add the finely chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for an additional minute. Remove from heat.
- To the bowl with soaked bread, add the sautéed onion and garlic, ground beef, Parmesan cheese, eggs, parsley, tomato paste, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix until just combined; avoid overmixing to keep the meatloaf tender.
- Transfer the meat mixture to the prepared baking tray, shaping it into a loaf approximately 10 inches long and 5 inches wide.
- In a separate bowl, whisk together all the glaze ingredients. Spread half of the glaze evenly over the top of the meatloaf.
- Bake the meatloaf for 50 minutes. Remove from the oven and spread half of the remaining glaze over the top. Return to the oven and bake for an additional 20 minutes, or until the internal temperature reaches 160°F (71°C).
- Once done, let the meatloaf rest for 10 minutes before slicing. Serve with the remaining glaze and your choice of sides.
