Ingredients:

4 tablespoons (60g) unsalted butter​
1 medium onion, finely chopped​
2 cloves garlic, minced​
¼ cup (30g) all-purpose flour​
2 cups (480ml) chicken or vegetable broth​
2 cups (480ml) milk​
4 cups broccoli florets, chopped​
2 cups (200g) sharp cheddar cheese, shredded​
Salt and pepper to taste​
Optional: A pinch of smoked paprika or cayenne pepper for added heat​


Directions:

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes. Add the minced garlic and cook for an additional minute until fragrant.​

Sprinkle the flour over the onion and garlic mixture, stirring constantly, and cook for 2-3 minutes to form a roux.​

Gradually whisk in the broth and milk, ensuring no lumps remain. Bring the mixture to a gentle simmer.​

Add the chopped broccoli florets to the pot. Cook until the broccoli is tender, about 10-15 minutes.​

Using an immersion blender, puree the soup to your desired consistency. Alternatively, transfer portions of the soup to a blender, blend until smooth, and return to the pot.​
