For the Strawberry Swirl:
1 cup fresh strawberries, hulled and chopped
2 tablespoons granulated sugar
1 teaspoon lemon juice
1 teaspoon cornstarch + 1 teaspoon water
For the Cheesecake Filling:
16 oz (2 packages) cream cheese, softened
¾ cup granulated sugar
2 large eggs
½ cup sour cream
1 teaspoon vanilla extract
1 tablespoon all-purpose flour
Directions:
1️⃣ Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and wrap the bottom with foil to prevent leaks.
2️⃣ Make the crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the pan. Bake for 8-10 minutes, then let cool.
3️⃣ Prepare the strawberry swirl: In a saucepan, cook strawberries, sugar, and lemon juice over medium heat for 5 minutes. Stir in the cornstarch mixture and cook for 2 more minutes until thickened. Let cool.
4️⃣ Make the cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, vanilla, and flour until just combined.
5️⃣ Assemble the cheesecake: Pour the batter over the crust. Drop spoonfuls of strawberry sauce on top and swirl with a knife.
6️⃣ Bake: Place the pan in a larger dish with hot water (water bath method). Bake for 45-50 minutes until the center is slightly set.
7️⃣ Cool & chill: Let cool for 1 hour in the oven with the door slightly open, then refrigerate for at least 4 hours or overnight.
8️⃣ Serve: Slice and enjoy your creamy Strawberry Swirl Cheesecake! 🍓🍰
