1 cup orzo pasta
2 tbsp butter
Zest of 1 lemon
2 tbsp fresh lemon juice
1 ½ cups chicken or vegetable broth
1 tbsp olive oil
Salt and pepper, to taste
Fresh parsley, for garnish
Directions:
To Make the Lemon Orzo:
In a medium saucepan, heat the olive oil and butter over medium heat.
Add the orzo and sauté for 2–3 minutes until lightly golden.
Stir in broth, lemon zest, and lemon juice. Bring to a simmer, cover, and cook for 8–10 minutes until orzo is tender and the liquid is absorbed.

To Grill the Scallops:
